  1.                         APPLE NUT MUFFINS

  4. 1-1/2 c. flour
  5. 2 t. baking powder
  6. 1/4 t. salt
  7. 2 egg whites or 1 egg
  8. 1/4 c. oil
  9. 1/2 c. sugar
  10. 1 t. vanilla
  11. 1/2 c. skim milk
  12. 2 c. chopped unpeeled apples
  13. 1/4 c. chopped walnuts
  14.  
  15.           Beat egg, add oil, sugar and vanilla.  Add half of the
  16. dry ingredients.  Stir in milk and then remaining dry
  17. ingredients.  Fold in apples and nuts.  Fill greased muffin cups
  18. 2/3 full.  Bake at 350 degrees for 20 minutes.  Cool 5 minutes in
  19. muffin cups.  Makes 16 muffins at 122 calories each.
